Keto Summer Treat

We're exactly 1 month past Midsummer's Eve, and we're right smack dab in the middle of a vicious Summer Heat Wave. So I thought it would be the perfect time to unveil an ice cold, Keto Summer Treat! Now I was inspired to make this when I saw the beautiful image on a website. Once I saw that image, I just knew I had to create this recipe and make it just for you! This recipe is flexible, and you can modify it to your own tastes as it's a bit of a "mocktail". If you are dirty keto, do not hesitate to use Sprite Zero instead of Club Soda!

Fizzy Fun Summer Sun Soda

Ingredients

  • 6 Oz Club Soda
  • 4-6 Medium Berries Blueberry, Raspberry, or Blackberry {Preferably Frozen}
  • 1 Tbsp Lemon Juice
  • 1 Tbsp Lime Juice
  • 3 Leaves Mint
  • 1/4th Tsp Splenda Zero or Liquid Stevia

Instructions

  • Place the mint in your glass first with two cubes of ice, and muddle the ice and mint together with another glass or a muddler if you have one.
  • Pour your Lemon and Lime in first, then add the club soda on top of that.
  • Add a couple of your berries, for me personally I like to go two different berries in order to just have differing color. So maybe blueberries here.
  • Then add a few more cubes of ice which should lower the blueberries to the bottom.
  • Add your liquid sweetener 1/16th a tsp at a time or one small squeeze at a time stirring after each.
  • Make sure to taste and verify it's to your liking with a sip.
  • Add your other berries, and one more mint leaf on top.
  • You'll now have an absolutely beautiful, slightly tart and sweet drink that you can sip and enjoy!

Notes

If you swap out the Club Soda for Sprite Zero or Diet 7up you can get rid of the Lemon/Lime step. You can also use a lemon or lime, or even lemon/lime Sparkling Water if you can find one you like. So there are plenty of options here. Lastly you could use plain old water if you wanted, it just won't have the nice little fizz to it, but it'll still be delicious!
